Ingredients:

Bay leaf, Cardamom, Cilantro, Cinnamon, Coriander, Cumin, Garam masala, Garlic, Ginger, Fenugreek leaves, Kashmiri chili, Paprika smoked, and Turmeric.

RECIPE DUM ALOO

Ingredients:
- Baby potatoes – 500g
- Tomatoes – 100g
- Oil – 3 Tbsp
- Yogurt – 2 Tbsp
- Leena Aloo Dum Spice – 1.5 tsp
- Onion – 2 medium, chopped
- Cashews – 2 Tbsp (optional)
- Salt – to taste
- To garnish: Fenugreek leaves and cilantro

Method:
1. Boil and prep the potatoes: Boil the baby potatoes until tender, then peel and set them aside to cool. Once cooled, prick each potato with a fork.
2. Prepare the spice paste: In a blender, combine the chopped onions, cashews, tomatoes, and Leena Aloo Dum Spice. Blend until smooth, adding a little water if needed to create a smooth paste.
3. Fry the potatoes: Heat 3 tablespoons of oil in a saucepan over medium heat. Add the pricked potatoes and fry until golden brown. Once fried, remove the potatoes from the pan and set aside.
4. Cook the spice paste: In the same pan, with the remaining oil, add the blended spice paste. Cook on medium heat for a few minutes, stirring occasionally, until the paste thickens and starts to leave the sides of the pan.
5. Add yogurt and adjust seasoning: Stir in the yogurt and salt. Cook for a few minutes, adding water as needed to achieve a gravy-like consistency.
6. Combine potatoes and gravy: Add the fried potatoes to the gravy along with ¾ cup of water. Simmer for about 5 minutes, or until the gravy thickens to your desired consistency.
7. Garnish and serve: Garnish with fenugreek leaves and cilantro. Serve hot with naan, roti, or jeera rice.
