CHICKPEA SALAD

Ingredients

  • 1 can chickpeas (garbanzo peas)
  • 2 large tomatoes, finely chopped
  • 1 onion, finely chopped
  • Half cucumber, finely chopped
  • Handful of rocket leaves, chopped
  • 1 tsp chopped coriander leaves
  • 1 small green chili, chopped (optional)
  • 1 Tbsp lemon juice
  • Half tsp cumin powder
  • 1 tsp Leena Chat Masala
  • Salt and pepper to taste

 

Method

  • Drain and rinse chickpeas
  • In a bowl mix all the ingredients together
  • Keep aside for 20 minutes
  • Serve
